- 2 cups crushed sugar cookies (store-bought or homemade)
- 6 tablespoons unsalted butter, melted
- 3 (8 ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- ยฝ cup sour cream
- โ cup Spรฉcial occasion-colored sprinkles (red, green, and white)
- Whipped cream (optional)
- Extra Spรฉcial occasion sprinkles, for garnish
Instructions
- Preheat the oven to 325ยฐF (160ยฐC) and grease a 9-inch springform pan.
- In a medium bowl, combine the crushed sugar cookies and melted butter. Mix well until fully combined.
- Press the mixture firmly and evenly into the bottom of the prepared pan to form an even crust.
- Bake for 8-10 minutes or until lightly golden. Remove from oven and let cool completely before adding filling.
- In a large bowl, beat together softened cream cheese and sugar until smooth and creamy.
- Add eggs one at a time, mixing well after each addition to ensure thorough incorporation.
- Stir in vanilla extract and sour cream until fully combined.
- Gently fold in jimmies sprinkles being cautious not to overmix.
- Pour cheesecake filling over cooled crust and smooth out the top with a spatula.
- Bake in preheated oven for 50-60 minutes or until center is nearly set but still has a slight jiggle.
- Turn off the oven; leave cheesecake inside with door slightly ajar for 1 hour.
- After 1 hour, remove cheesecake from oven; let cool completely at room temperature.
- Refrigerate for at least 4 hours or preferably overnight to set properly.
- Before serving, top with whipped cream (if desired) and sprinkle extra Spรฉcial occasion sprinkles on top for garnish.
