Ingredients
- 2 cups cooked jasmine rice (cold & day-old)
- 1 green onion (finely chopped)
- 2.5 tbsp regular soy sauce (or light soy sauce)
- 1/2 tbsp sesame oil
- 4 large eggs (beaten)
- 2 tbsp vegetable oil
Instructions
- Heat the vegetable oil in a large pan or wok over medium-high heat.
- Pour in the beaten eggs and stir-fry until they begin to set but remain moist.
- Add the cold rice, breaking apart any clumps with a spatula.
- Move everything to one side of the pan, add green onions to the empty space, and mix them into the rice and egg mixture.
- Drizzle soy sauce and sesame oil around the edges of the pan, tossing everything together until coated and slightly browned.
