- 130 g powdered sugar
- 120 g almond flour
- 105 g egg whites (about 3)
- 100 g granulated sugar
- 1 teaspoon vanilla bean paste
- 10 drops red food gel
- 10 drops blue food gel
- 113 g cold heavy cream
- 113 g cold mascarpone
- 50 g granulated sugar
Instructions
- Preheat the oven to 300°F (150°C) and prepare your baking sheets with parchment paper.
- Sift together almond flour and powdered sugar in a bowl. Set aside.
- Whip egg whites with granulated sugar over simmering water until dissolved, then transfer to a stand mixer and beat until stiff peaks form. Add vanilla.
- Gently fold sifted dry ingredients into meringue until combined.
- Divide mixture into two bowls; add red food gel to one and blue to the other.
- Pipe circles onto prepared sheets using a template; let rest for 30-45 minutes.
- Bake macarons for 12-14 minutes; allow them to cool completely.
- For frosting, beat heavy cream, mascarpone, and sugar until thick.
- Assemble macarons by piping frosting between two shells.
