Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a large bowl, whisk together the sugar, flour, baking powder, and salt until well combined.
- Melt the butter in a saucepan over low heat and allow it to cool slightly.
- In another bowl, whisk together the eggs, lemon zest, and lemon juice until frothy; gradually add the melted butter while whisking continuously.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Spread the batter evenly in the prepared pan and bake for 20-25 minutes until a toothpick inserted into the center comes out clean or with moist crumbs.
