  • 1 cup potatoes (diced)
  • 1 cup corn kernels
  • 1 cup green beans (chopped)
  • 1 can (10.5 oz cream of mushroom soup)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown 1 pound of ground beef until fully cooked; drain excess fat.
  3. Add 1 chopped onion and 2 minced garlic cloves to the skillet; sauté until onions are translucent.
  4. In a mixing bowl, combine the beef mixture with 1 cup each of sliced carrots, diced potatoes, corn kernels, and chopped green beans, along with 1 can of cream of mushroom soup and seasonings (salt, pepper, thyme, parsley). Mix well.
  5. Transfer everything to a casserole dish and top with 1 cup of shredded cheddar cheese.
  6. Cover with foil and bake for 40 minutes; then remove foil and bake for another 10 minutes until cheese is bubbly.
