Ingredients
- 4 boneless, skinless chicken breasts (about 6 oz each)
- 1 medium Granny Smith apple, thinly sliced
- 4 oz light Brie cheese, sliced
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp dried thyme
- 1 tbsp olive oil
- 1 tbsp maple syrup
- 1 tbsp creamy Dijon mustard
- 1 tsp whole grain Dijon mustard
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice each chicken breast horizontally to create a pocket without cutting all the way through.
- Stuff each chicken breast with apple slices and Brie, then press gently to secure.
- Season both sides of the stuffed chicken with salt, pepper, and thyme.
- Heat olive oil in a skillet over medium-high heat; sear the chicken for 1-2 minutes on each side until golden brown.
- In a small bowl, whisk together maple syrup and both types of mustard for the glaze.
- Brush the glaze on top of the chicken before transferring it to the oven.
- Bake for 20-25 minutes or until cooked through.
