  • 1/2 cup brown sugar
  • 1/3 cup applesauce (sweetened or unsweetened)
  • 1/2 cup apple cider
  • 1 tsp vanilla
  • 2 eggs
  • 1/2 cup softened butter or dairy-free alternative
  • 12 tbsp water, milk or more apple cider
  • 1 tsp vanilla
  • 1/2 tsp cinnamon
  • pinch of nutmeg
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In one bowl, whisk together oat flour, baking powder, salt, cinnamon, nutmeg, allspice, and cloves.
  3. In another bowl, mix melted coconut oil with brown sugar until smooth. Stir in applesauce, apple cider, vanilla, and eggs.
  4. Gradually combine the dry ingredients with the wet mixture until just combined.
  5. Fill cupcake liners two-thirds full and bake for 20-22 minutes or until a toothpick inserted comes out clean.
  6. For frosting, beat softened butter until creamy. Gradually add powdered sugar and milk or apple cider until desired consistency is reached, then mix in vanilla and spices.
  7. Once cooled, frost each cupcake generously.
