Ingredients
- 1 1/3 cup oat flour (certified gluten-free) or gluten-free all purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp allspice
- pinch of cloves
- 1/2 cup melted coconut oil or dairy-free butter alternative
- 1/2 cup brown sugar
- 1/3 cup applesauce (sweetened or unsweetened)
- 1/2 cup apple cider
- 1 tsp vanilla
- 2 eggs
- 1/2 cup softened butter or dairy-free alternative
- 1–2 tbsp water, milk or more apple cider
- 1 tsp vanilla
- 1/2 tsp cinnamon
- pinch of nutmeg
- 2 cups powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In one bowl, whisk together oat flour, baking powder, salt, cinnamon, nutmeg, allspice, and cloves.
- In another bowl, mix melted coconut oil with brown sugar until smooth. Stir in applesauce, apple cider, vanilla, and eggs.
- Gradually combine the dry ingredients with the wet mixture until just combined.
- Fill cupcake liners two-thirds full and bake for 20-22 minutes or until a toothpick inserted comes out clean.
- For frosting, beat softened butter until creamy. Gradually add powdered sugar and milk or apple cider until desired consistency is reached, then mix in vanilla and spices.
- Once cooled, frost each cupcake generously.
