  • 1/4 cup salted butter
  • 1/2 cup light brown sugar, packed
  • 1 tbsp lemon juice
  • 2 and 1/2 tsp cinnamon
  • 1 tsp nutmeg

  • 1/4 tsp allspices
  • pinch of salt
  • 1/2 tsp vanilla extract
  • 2 tsp corn starch
  • 2 tsp water
  • 1/2 cup salted butter, melted
  • 1 cup warm milk
  • 2 large eggs, lightly beaten
  • 1/3 cup granulated sugar
  • 2 and 1/2 tsp instant yeast
  • 3/4 tsp salt
  • 4 cups + 1 tbsp all-purpose flour
  • 1/4 cup all-purpose flour
  • 1/2 cup old-fashioned whole rolled oats
  • 1/4 cup light brown sugar, packed
  • 1/8 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 cup salted butter, cold
  • 1/2 cup salted butter, very softened
  • 3/4 cup dark brown sugar, packed
  • 2 tsp cinnamon
  • pinch of salt
  • 1 tsp vanilla extract
  • 6 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • pinch of salt
  • 1/8 tsp cinnamon
  • 23 tbsp milk or cream (optional)

Instructions

  1. Add all apple filling ingredients to a medium pan over medium-high heat. Cook for 8–10 minutes, stirring occasionally, until desired tenderness is reached. If needed, add a splash more cider or water during cooking to keep it saucy. Once tender, thicken by stirring together cornstarch and water until dissolved; add to apple filling over medium heat and cook while stirring for another 30–60 seconds.
  2. In your stand mixer bowl, add melted butter, warm milk, beaten eggs, sugar, yeast, and salt. Whisk together. Switch to paddle attachment and add flour; mix on low speed until just combined. Let it rest for 5 minutes before adding dough hook. Knead on low speed for about 5–7 minutes until smooth but still slightly slack. Place in a greased bowl to rise for about 1 hour until doubled.
  3. Preheat oven to 350°F. Line a sheet pan with parchment paper. Whisk together flour, oats, brown sugar, salt, and cinnamon in a bowl. Cut cold butter into chunks; mix into dry ingredients until crumbly. Spread evenly on prepared sheet pan; bake for about 12–16 minutes until golden brown.
  4. Combine sauce ingredients in a bowl until well mixed. Spray a baking pan with nonstick spray; spread this thick mixture evenly in the bottom.
  5. Beat together all filling ingredients in a bowl on medium-high speed until creamy and combined.
  6. After dough has risen for about an hour, flour your counter generously. Roll out dough into approximately 14×24 inches. Spread cinnamon filling evenly across dough then top with apple filling.
  7. Cut strips from long side of dough about 1¾ inches thick; roll each strip tightly into rolls. Place in prepared pan over caramel sauce. Cover loosely with kitchen towel; let rise again for about 30–40 minutes.
  8. Pour room temperature cream over rolls before baking at 350°F for about 40–46 minutes until golden brown.
  9. Beat all frosting ingredients in a mixing bowl until creamy; adjust consistency with milk if desired.
  10. Frost warm rolls immediately after baking; top each with apple topping and crumble sprinkle. Enjoy fresh! Store leftovers in an airtight container in fridge for up to three days—great reheated!
