- 1 1/2 cups cold unsalted butter
- 1 large egg
- 2 cups dried apricots (roughly chopped)
- 1/2 cup granulated sugar (for filling)
- 2 tablespoons fresh lemon juice
Instructions
- Prepare the Apricot Filling: In a saucepan, combine chopped dried apricots with enough water to cover them. Add sugar and simmer until tender. Stir in fresh lemon juice and set aside to cool.
- Preheat the Oven: Set your oven to 375°F (190°C) and prepare a greased or parchment-lined baking pan (9×13 inches).
- Make the Shortbread Dough: In a mixing bowl, combine flour, sugar, baking powder, and salt. Cut in cold butter until the mixture resembles coarse crumbs. Stir in beaten egg until just combined.
- Assemble the Bars: Press half of the dough into the bottom of your prepared pan. Spread cooled apricot filling over this layer and crumble remaining dough on top.
- Bake: Place in preheated oven and bake for 30-35 minutes or until golden brown on top. Allow to cool completely before cutting into bars.
