Ingredients
- 1 large red onion
- 3 tomatoes
- 15 oz can butter beans
- 1/4 cup parsley
- 3.5 tbsp olive oil
- 1.5 tbsp red apple vinegar
- 1 tbsp lemon juice
- 2.5 tsp sumac
- 1/2 tsp salt
- freshly ground black pepper to taste
- 1.5 tsp aleppo chili flakes
Instructions
- Slice the red onion into half-moons and dice the tomatoes into 1/2-inch cubes. Place them in a mixing bowl.
- Add the drained and rinsed butter beans and finely chopped parsley to the bowl.
- Sprinkle in sumac, salt, Aleppo chili flakes, and black pepper. Toss gently to combine.
- In another bowl, whisk together olive oil, red apple vinegar, lemon juice, and additional salt if desired.
- Pour the dressing over the salad mixture and toss until evenly coated.
- Serve immediately or let sit for about 10 minutes to allow flavors to meld.
