  • 1 (9-ounce) package cheese tortellini
  • 2 cups fresh spinach leaves

Instructions

  1. In a large pot, heat olive oil over medium-high heat. Add the chicken sausage and brown for about 5-7 minutes. Remove and set aside.
  2. In the same pot, add onion, carrot, and celery; sauté for about 5 minutes until tender. Stir in garlic and Italian seasoning; cook until fragrant (about 1 minute).
  3. Pour in chicken broth and diced tomatoes, return sausage to the pot, and simmer for 20 minutes.
  4. Add tortellini and cook for about 7-9 minutes until tender.
  5. Stir in spinach leaves until wilted; season with salt and pepper to taste.
