- 1 tablespoon olive oil
- 1 pound chicken sausage, casings removed
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 carrots, peeled and sliced
- 2 stalks celery, sliced
- 6 cups chicken broth
- 1 (14.5-ounce) can diced tomatoes
- 1 (9-ounce) package cheese tortellini
- 2 cups fresh spinach leaves
Instructions
- In a large pot, heat olive oil over medium-high heat. Add the chicken sausage and brown for about 5-7 minutes. Remove and set aside.
- In the same pot, add onion, carrot, and celery; sauté for about 5 minutes until tender. Stir in garlic and Italian seasoning; cook until fragrant (about 1 minute).
- Pour in chicken broth and diced tomatoes, return sausage to the pot, and simmer for 20 minutes.
- Add tortellini and cook for about 7-9 minutes until tender.
- Stir in spinach leaves until wilted; season with salt and pepper to taste.
