Instructions
- Boil the eggs in a saucepan for exactly 7 minutes. Transfer to a bowl of ice water immediately after cooking.
- Toast the English muffin halves until crisp.
- Spread the mashed avocado evenly on each half, then top with cottage cheese. Sprinkle with paprika and garnish with fresh parsley.
- Slice and peel the soft-boiled eggs, placing them alongside the toasts. Season with salt and pepper before serving.
