Instructions
- In a medium bowl, combine corn, diced avocado, diced cucumber, red onion, cherry tomatoes, and cilantro.
- Toss gently to mix all ingredients evenly.
- In a separate bowl, whisk together white apple vinegar, olive oil, lime juice, maple syrup, Dijon mustard, and salt until smooth.
- Pour the dressing over the salad mixture and fold gently to coat all ingredients.
- Serve over butter lettuce leaves in individual bowls.
