Ingredients
- 4 thick cod fillets
- 2 tablespoons olive oil
- 1 medium onion
- 2 cloves garlic
- 1 tablespoon ginger
- 1 can full-fat coconut milk
- 3 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, add olive oil and sauté the chopped onion until translucent (about 5 minutes). Stir in minced garlic and grated ginger; cook for another minute until fragrant.
- Add coconut milk, lemon juice, salt, and pepper to the skillet. Stir well and simmer for about 5 minutes.
- In a baking dish, place the cod fillets in a single layer. Pour the coconut lemon sauce over the cod evenly. Sprinkle lemon zest on top.
- Bake for 20-25 minutes or until the fish flakes easily with a fork.
