  • lbs baby potatoes (red or gold)
  • 2 tablespoons olive oil
  • 2 tablespoons melted butter
  • 3 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup Parmesan cheese (freshly grated)
  • Fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Boil the baby potatoes in salted water for 15–20 minutes until fork-tender. Drain and let them sit for five minutes to dry.
  3. Place the boiled potatoes on the baking sheet and gently smash each one to about ½-inch thick using the bottom of a glass.
  4. In a bowl, combine olive oil, melted butter, and minced garlic. Brush this mixture over each smashed potato, then sprinkle with salt, pepper, and top with Parmesan cheese.
  5. Bake for 25–30 minutes until golden brown and crispy around the edges.
  6. Garnish with fresh parsley before serving.
