- 2 medium ripe bananas
- ¼ cup peanut butter
- ½ cup chocolate chips (dark and sugar-free if desired)
- 1 tsp coconut oil
- Flaky salt (optional)
Instructions
- Peel and slice bananas into ½-inch thick rounds.
- On parchment paper, spread peanut butter on half the banana slices and top with remaining slices to create sandwiches.
- Freeze sandwiches for at least 30 minutes until firm.
- Melt chocolate chips with coconut oil in a microwave-safe bowl in 30-second intervals until smooth.
- Dip each sandwich into melted chocolate, return to parchment paper, and sprinkle with flaky salt if desired.
- Freeze again for about 30 minutes until chocolate hardens.
- Enjoy immediately or store in an airtight container in the freezer for up to two months.
