- 2 cups gluten-free all-purpose flour
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup canola oil
- 3 medium overripe bananas, mashed
- 1 teaspoon almond extract (or vanilla extract)
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1/2 cup chocolate chips
Instructions
- Preheat the oven to 425°F. Spray a bread pan with non-stick cooking spray.
- In a bowl, mix gluten-free flour, salt, and baking soda.
- In another bowl, combine sugar, eggs, canola oil, almond extract (or vanilla), and mashed bananas until blended.
- Gradually add dry ingredients to wet ingredients, stirring gently until just combined.
- Fold in chocolate chips and pour the batter into the prepared bread pan.
- Bake at 425°F for 8 minutes then reduce the heat to 350°F without opening the door. Bake an additional 50-60 minutes until a knife inserted comes out clean.
