Ingredients
- 1 medium head cauliflower (about 4 cups florets)
- 2 large eggs
- 1 cup plain breadcrumbs
- ½ cup grated Parmesan cheese
- ¼ cup chopped green onions
- 1 tsp garlic powder
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Steam or boil cauliflower florets until tender (about 5 minutes). Drain well and let cool.
- In a mixing bowl, mash cooled cauliflower until slightly chunky.
- Stir in eggs, breadcrumbs, Parmesan cheese, green onions, garlic powder, salt, and pepper until combined.
- Form mixture into small patties (about 2 tablespoons each) and place on a parchment-lined baking sheet.
- Bake for 20-25 minutes or until golden brown and crispy.
- Serve hot with your favorite dipping sauce.
