Ingredients
- 8 pieces chicken drumsticks and thighs (on the bone, skinned)
- 1 teaspoon kosher salt
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 3 cups frozen mixed vegetables
- 1/2 cup BBQ sauce (divided)
- Optional: chopped fresh parsley for garnish
- 4 pieces heavy-duty aluminum foil (12 x 18 inches)
Instructions
- Preheat grill to medium-high heat or oven to 425°F.
- Cut four large pieces of foil and place 3/4 cup of frozen mixed veggies in the center of each.
- In a bowl, season chicken with salt, garlic powder, and smoked paprika. Brush with BBQ sauce and place two pieces in each packet.
- Seal the packets tightly to keep steam inside.
- For grilling: Cook over indirect heat for 50-55 minutes until chicken reaches an internal temperature of 160°F.
- For baking: Place packets on a baking sheet and bake for about 50-55 minutes.
- Brush cooked chicken with remaining BBQ sauce and garnish before serving.
