- 2 cups fresh blueberries (plus more for garnish)
- (optional) low-fat whipped cream
Instructions
- In a medium bowl, whisk together softened light cream cheese, sugar, and vanilla extract until smooth.
- Fold in the nonfat plain Greek yogurt until fully combined. Set aside.
- In another bowl, mix diced strawberries and blueberries.
- Layer the parfaits in clear cups or jars: start with the cream cheese mixture, followed by mixed berries, and repeat until ingredients are used up, finishing with berries on top.
- Add a dollop of low-fat whipped cream if desired.
