Ingredients
- 3 large sweet potatoes
- 3 tablespoons olive oil
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/2 teaspoon coriander
- 1/2 teaspoon crushed red chili flakes
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 tablespoon honey (regular or spicy)
- 1/3 cup feta cheese, crumbled
- Chopped fresh chives or parsley
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and scrub the sweet potatoes, then pierce them several times with a knife.
- In a mixing bowl, combine olive oil and spices. Toss sweet potatoes in the mixture until evenly coated.
- Place on a baking sheet lined with aluminum foil and bake for about 40 minutes until tender.
- Drizzle honey over each potato and sprinkle feta on top; return to the oven for an additional 5-10 minutes.
- Garnish with chives or parsley before serving.
