Ingredients
- 1 beef tenderloin roast (4 to 6 pounds)
- 2 tablespoons minced garlic
- 1 large onion, chopped
- 1 can plain breadcrumbs (10 oz)
- 1 cup melted unsalted butter
- 1 bunch fresh parsley, finely chopped
- Salt and ground black pepper
Instructions
- Preheat your oven to 375°F (190°C). Season the beef tenderloin generously with salt and pepper.
- In a mixing bowl, combine breadcrumbs, minced garlic, chopped onion, melted butter, and parsley.
- Carefully slice a pocket in the center of the tenderloin and fill it with the stuffing mixture.
- Place the stuffed tenderloin in a roasting pan and roast for about 50 minutes or until a meat thermometer reads 135°F for medium-rare.
- Let it rest for at least 10 minutes before slicing and serving.
