  • 2 cups grape tomatoes (halved)
  • 1 ½ cups bell peppers (diced)

  • 8 oz black olives (sliced)
  • 8 oz fresh mozzarella pearls
  • ½ cup parmesan cheese (shredded)
  • 1 ¼ cup olive oil
  • 3 tbsp lemon juice (freshly squeezed)
  • 1 ½ tbsp Italian seasoning
  • 2 tsp sugar
  • 3 tbsp red apple vinegar
  • 2 tsp garlic (minced)
  • 1 tsp Dijon mustard
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

  1. Cook the rotini pasta according to package directions until al dente. Drain and rinse under cold water.
  2. In a medium bowl, whisk together olive oil, lemon juice, Italian seasoning, sugar, red apple vinegar, Dijon mustard, garlic, salt, and pepper.
  3. In a large mixing bowl, combine the cooked pasta with turkey slices and vegetables. Pour the dressing over the salad and mix until well coated.
