Ingredients
- 16 oz rotini pasta
- 10 oz turkey slices (chopped)
- 1 cup English cucumber (sliced)
- 2 cups grape tomatoes (halved)
- 1 ½ cups bell peppers (diced)
- ½ cup red onion (chopped)
- 8 oz black olives (sliced)
- 8 oz fresh mozzarella pearls
- ½ cup parmesan cheese (shredded)
- 1 ¼ cup olive oil
- 3 tbsp lemon juice (freshly squeezed)
- 1 ½ tbsp Italian seasoning
- 2 tsp sugar
- 3 tbsp red apple vinegar
- 2 tsp garlic (minced)
- 1 tsp Dijon mustard
- ½ tsp salt
- ½ tsp black pepper
Instructions
- Cook the rotini pasta according to package directions until al dente. Drain and rinse under cold water.
- In a medium bowl, whisk together olive oil, lemon juice, Italian seasoning, sugar, red apple vinegar, Dijon mustard, garlic, salt, and pepper.
- In a large mixing bowl, combine the cooked pasta with turkey slices and vegetables. Pour the dressing over the salad and mix until well coated.
- Chill in the refrigerator for at least one hour before serving.
