- 1/2 cup butter (softened)
- 1/2 cup brown sugar (packed)
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup mashed ripe bananas (about 2 and 1/2 medium bananas)
- 1 cup all-purpose flour
- 1/2 cup old-fashioned oats (blended into a powder)
- 1 teaspoon baking soda
- 1 & 1/2 teaspoons baking powder
- 3/4 teaspoon kosher salt
- 1/2 cup sour cream
- Optional: nuts, cinnamon, nutmeg, cloves
Instructions
- Preheat your oven to 350°F (175°C). Prepare a 9×5 inch loaf pan by spraying with nonstick spray or lining with parchment paper.
- If using nuts, toast them on a baking sheet in the oven for about 5–7 minutes until fragrant.
- In a large bowl or stand mixer, cream together softened butter, brown sugar, and granulated sugar until fluffy. Add eggs and vanilla; mix until combined.
- Mash ripe bananas and stir into the butter mixture.
- In another bowl, combine blended oat flour, all-purpose flour, baking soda, baking powder, and salt. Slowly mix this into the wet ingredients until just combined.
- Gently fold in sour cream and any optional spices or nuts.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 55–65 minutes or until a toothpick comes out clean from the center.
- Allow cooling before slicing.
