  • 1/2 cup old-fashioned oats (blended into a powder)
  • 1 teaspoon baking soda
  • 1 & 1/2 teaspoons baking powder
  • 3/4 teaspoon kosher salt
  • 1/2 cup sour cream
  • Optional: nuts, cinnamon, nutmeg, cloves

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a 9×5 inch loaf pan by spraying with nonstick spray or lining with parchment paper.
  2. If using nuts, toast them on a baking sheet in the oven for about 5–7 minutes until fragrant.
  3. In a large bowl or stand mixer, cream together softened butter, brown sugar, and granulated sugar until fluffy. Add eggs and vanilla; mix until combined.
  4. Mash ripe bananas and stir into the butter mixture.
  5. In another bowl, combine blended oat flour, all-purpose flour, baking soda, baking powder, and salt. Slowly mix this into the wet ingredients until just combined.
  6. Gently fold in sour cream and any optional spices or nuts.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 55–65 minutes or until a toothpick comes out clean from the center.
