- 16 oz rotini pasta
- 1 can (15 oz) black beans
- 1 can (11 oz) corn
- 1 cup fresh spinach
- ¼ cup fresh cilantro
- 1 cup plain Greek yogurt
- 2 limes
Instructions
- Cook rotini pasta according to package instructions until al dente. Drain and rinse under cool water.
- In a large mixing bowl, combine Greek yogurt, olive oil, minced garlic, cumin, smoked paprika, sugar, salt, and lime juice. Whisk until smooth.
- Add the drained pasta to the bowl with the dressing. Mix in black beans, corn, spinach, and cilantro until well combined.
- Serve immediately or chill for two hours to enhance flavors.
