Ingredients
- 12 oz fresh blackberries
- 1 ½ tablespoons water
- Sugar (to taste)
- 6 oz cream cheese
- 4 tablespoons milk
- 2 tablespoons fresh lime juice
- ½ teaspoon lime zest (optional)
- 1 ½ teaspoons vanilla extract
- ½ cup powdered sugar
Instructions
- In a medium saucepan, combine blackberries and water; cook over medium heat until soft (10-15 minutes). Sweeten with sugar if needed.
- Blend the mixture until smooth; refrigerate until cool (at least 30 minutes).
- Beat together cream cheese, milk, lime juice, zest (if desired), vanilla extract, and powdered sugar until smooth; refrigerate.
- Layer the blackberry puree and cheesecake filling in popsicle molds; insert sticks and freeze until solid.
- To serve, run warm water over molds for easy removal.
