- 2 large eggs

- 1 teaspoon lemon zest (optional)
- 1 cup all-purpose flour (130g)
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups blueberries (325g)
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F (175°C) and prepare an 8-inch springform pan.
- In a bowl, whisk together flour, baking powder, salt, and cinnamon.
- Cream butter and sugar using an electric mixer until fluffy. Add eggs one by one along with vanilla and lemon zest.
- Gradually mix in the dry ingredients until just combined.
- Spread batter into prepared pan and top with blueberries tossed in lemon juice and flour.
- Bake for 45-55 minutes or until a toothpick comes out clean.
- Cool before dusting with powdered sugar and serving.
