  • 2/3 cup frozen wild blueberries
  • Neutral frying oil (vegetable, canola, or avocado oil)
  • 3 cups powdered sugar
  • 1/4 cup + 23 tablespoons whole milk
  • 1/4 cup freeze-dried blueberry powder
  • 1 teaspoon blueberry emulsion or extract

Instructions

  1. In a medium bowl, whisk together flour, baking powder, and salt; set aside.
  2. In a large bowl, mix together sugar, melted butter, buttermilk, egg, sour cream, and vanilla until smooth.
  3. Fold dry ingredients into wet mixture until almost combined; gently fold in frozen blueberries. Cover and refrigerate for 30 minutes.
  4. Heat oil in a Dutch oven to 355°F (180°C).
  5. Set up a wire rack over paper towels to drain excess oil.
  6. Using a spring-loaded scoop, carefully drop the dough into hot oil; fry until golden brown (about 3 minutes per side). Transfer to the wire rack to cool.
  7. For the glaze: Whisk together powdered sugar, freeze-dried blueberry powder, milk, and blueberry emulsion until smooth.
  8. Dip each donut into the glaze until fully covered; return to the wire rack.
