Ingredients
- 2 cups plus 2 tablespoons all-purpose flour, divided
- 2 cups fresh or frozen blueberries
- 1 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 1 1/2 cups granulated sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line it with parchment paper.
- If using fresh blueberries, rinse and dry them. For frozen blueberries, toss them with 1 tablespoon of flour to prevent sinking.
- In a large bowl, cream together softened butter, cream cheese, and sugar until light and fluffy. Beat in eggs one at a time followed by vanilla extract.
- In another bowl, whisk together remaining flour, baking powder, and salt.
- Gradually add dry ingredients to wet mixture; mix until just combined.
- Gently fold in blueberries and pour batter into prepared loaf pan.
- Bake for 55-70 minutes or until a skewer comes out clean. Cool in the pan for 15-20 minutes before transferring to a cooling rack.
