  • Total Time: 1 hour 20 minutes
  • Yield: Serves approximately 10 slices 1x

Ingredients

Scale
  • 2 cups plus 2 tablespoons all-purpose flour, divided
  • 2 cups fresh or frozen blueberries
  • 1 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line it with parchment paper.
  2. If using fresh blueberries, rinse and dry them. For frozen blueberries, toss them with 1 tablespoon of flour to prevent sinking.
  3. In a large bowl, cream together softened butter, cream cheese, and sugar until light and fluffy. Beat in eggs one at a time followed by vanilla extract.
  4. In another bowl, whisk together remaining flour, baking powder, and salt.
  5. Gradually add dry ingredients to wet mixture; mix until just combined.
  6. Gently fold in blueberries and pour batter into prepared loaf pan.
  7. Bake for 55-70 minutes or until a skewer comes out clean. Cool in the pan for 15-20 minutes before transferring to a cooling rack.
