Ingredients
- 1 pint fresh blueberries
- 2 peaches (diced)
- 2 Persian cucumbers (sliced)
- 1/2 cup crumbled feta
- 3 tablespoons lemon juice
- 1 tablespoon dijon mustard
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1 tablespoon chopped basil
- Salt and pepper to taste
- 2 tablespoons fresh parsley (finely chopped)
Instructions
- In a large bowl, combine blueberries, peaches, cucumbers, and feta.
- In a jar or measuring cup, mix together lemon juice, dijon mustard, honey, olive oil, salt, pepper, and basil. Shake or whisk until combined.
- Drizzle the vinaigrette over the salad and gently toss to coat all ingredients.
- Garnish with parsley and serve immediately or refrigerate until ready to enjoy.
