Ingredients
- 1 pint fresh blueberries
- 2 ripe peaches, diced
- 2 Persian cucumbers, thinly sliced
- 1/2 cup crumbled feta cheese
- 3 tablespoons fresh lemon juice
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1 tablespoon finely chopped fresh basil
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Rinse and pat dry the blueberries. Dice the peaches and slice the cucumbers.
- In a large mixing bowl, combine the blueberries, peaches, cucumbers, and feta cheese.
- For the vinaigrette, mix lemon juice, Dijon mustard, honey, olive oil, chopped basil, salt, and pepper in a jar or bowl until smooth.
- Drizzle the vinaigrette over the salad mixture and gently toss.
- Serve immediately or refrigerate for up to a few hours before serving.
