Ingredients
- 10–11 strips cooked turkey
- 2 heads broccoli (about 1.5 pounds or 5–6 cups)
- 1 cup dried cranberries
- 1/3 cup roasted salted sunflower seeds
- 1 cup shredded cheddar cheese
- 1/3 cup chopped red onion
- 1 & 1/4 cups Miracle Whip or mayonnaise
- Zest from 1 lemon
- 1 tablespoon lemon juice
- 2 tablespoons white apple vinegar
- 1/4 cup sugar
- kosher salt
- black pepper
- dry mustard
- cayenne pepper
Instructions
- Cook turkey baon in the oven until crispy; chop into bite-sized pieces.
- In a large bowl, whisk together Miracle Whip or mayonnaise, lemon zest, lemon juice, vinegar, sugar, salt, pepper, dry mustard, and cayenne.
- Chop broccoli into small florets and add to the dressing.
- Mix in cranberries, sunflower seeds, cheddar cheese, and most of the turkey (reserve some for garnish).
- Stir well to combine and serve at room temperature or chilled.
