Ingredients
- 1 cup of crushed graham crackers or digestive biscuits
- ½ cup of unsalted butter, melted
- ¼ cup of granulated sugar
- 2 cups of whipped cream or coconut cream for dairy-free
- 1 cup of bubblegum-flavored yogurt or vanilla yogurt
- 1 teaspoon of bubblegum extract
- 1 tablespoon of vegan gelatin or agar-agar
- ¼ cup of powdered sugar
- ½ cup of mini vegan marshmallows
- ¼ cup of colorful sprinkles
Instructions
- In a mixing bowl, combine crushed graham crackers, melted butter, and granulated sugar until crumbly.
- Press firmly into the bottom of a greased 9×9 inch baking pan.
- Chill in the refrigerator while preparing the filling.
- Dissolve vegan gelatin in warm water until thickened.
- In a large bowl, mix whipped cream, bubblegum yogurt, bubblegum extract, and powdered sugar until smooth.
- Fold in the dissolved vegan gelatin gently.
- Pour filling over the crust and spread evenly.
- Return to refrigerator for at least 60 minutes to set.
- Top with mini vegan marshmallows and colorful sprinkles before serving.
