  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 2 cups granulated sugar
  • 1/2 cup unsalted butter (room temperature)
  • 2 large eggs (room temperature)
  • 1 cup buttermilk (or substitute with milk and lemon juice)
  • 2 1/4 cups very ripe mashed bananas (about 5 medium)

Instructions

  1. Preheat your oven to 300°F. Grease and line two 9×5-inch loaf pans with parchment paper.

  3. In another bowl, cream together sugar and butter until fluffy. Add eggs one at a time, mixing well after each addition before folding in the mashed bananas.
  4. Gradually mix in the dry ingredients alternately with buttermilk, starting and ending with dry ingredients.
