Ingredients
- 2 tsp vegetable oil
- 1 lb lean ground beef
- 1 medium yellow onion, diced
- 2 cloves garlic, minced
- 4 cups chopped green cabbage
- 2 medium carrots, quartered and sliced
- 4 cups low-sodium beef broth
- 3 cans (8 oz each) tomato sauce
- 1/2 cup uncooked white rice
- 1 bay leaf
- 3 tbsp light brown sugar
- 2 tbsp fresh parsley, chopped
Instructions
- In a large soup pot, heat the vegetable oil over medium-high heat. Add the ground beef, season with salt and pepper, and cook until browned.
- Stir in the diced onion and minced garlic; cook for an additional 2-3 minutes until the onions are tender.
- Add the chopped cabbage, sliced carrots, tomato sauce, beef broth, uncooked rice, bay leaf, and brown sugar to the pot. Mix well.
- Bring to a simmer and let cook for about 25 minutes until the rice is tender.
- Remove the bay leaf before serving and garnish with fresh parsley.
