  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 4 cups chopped green cabbage
  • 2 medium carrots, quartered and sliced
  • 4 cups low-sodium beef broth
  • 3 cans (8 oz each) tomato sauce
  • 1/2 cup uncooked white rice
  • 1 bay leaf
  • 3 tbsp light brown sugar
  • 2 tbsp fresh parsley, chopped

Instructions

  1. In a large soup pot, heat the vegetable oil over medium-high heat. Add the ground beef, season with salt and pepper, and cook until browned.
  2. Stir in the diced onion and minced garlic; cook for an additional 2-3 minutes until the onions are tender.
  3. Add the chopped cabbage, sliced carrots, tomato sauce, beef broth, uncooked rice, bay leaf, and brown sugar to the pot. Mix well.
  4. Bring to a simmer and let cook for about 25 minutes until the rice is tender.
  5. Remove the bay leaf before serving and garnish with fresh parsley.
