  • 3 cloves garlic (minced)
  • 10 oz. Rotel diced tomatoes with green chilies (juice reserved)
  • ¾ cup cheddar jack cheese (shredded)
  • 2 teaspoons lime juice
  • Fresh cilantro (roughly chopped)
  • 12 tablespoons olive oil (or avocado oil)
  • 3 tablespoons butter

Instructions

  1. Season the chicken breasts with Cajun seasoning and coat with flour.
  2. Heat olive oil and butter in a skillet; cook the chicken until golden brown and cooked through. Remove from skillet.
  3. In the same skillet, sauté minced garlic, then add chicken broth and bring to a simmer.
  4. Stir in heavy cream, honey, hot sauce, brown sugar, and spices; simmer until slightly thickened.
  5. Return the chicken to the skillet, top with shredded cheese, allow it to melt, then serve garnished with lime juice and cilantro.
