Ingredients
- 2 large boneless skinless chicken breasts
- 1 ½ cups chicken broth
- ¾ cup heavy cream (or half and half)
- 2 teaspoons hot sauce
- 2 teaspoons Cajun seasoning
- 3 tablespoons flour
- 1 tablespoon honey
- 1 teaspoon brown sugar
- ½ teaspoon mustard powder
- ½ teaspoon oregano
- 1 pinch cayenne pepper
- 1 pinch red pepper flakes
- 3 cloves garlic (minced)
- 10 oz. Rotel diced tomatoes with green chilies (juice reserved)
- ¾ cup cheddar jack cheese (shredded)
- 2 teaspoons lime juice
- Fresh cilantro (roughly chopped)
- 1–2 tablespoons olive oil (or avocado oil)
- 3 tablespoons butter
Instructions
- Season the chicken breasts with Cajun seasoning and coat with flour.
- Heat olive oil and butter in a skillet; cook the chicken until golden brown and cooked through. Remove from skillet.
- In the same skillet, sauté minced garlic, then add chicken broth and bring to a simmer.
- Stir in heavy cream, honey, hot sauce, brown sugar, and spices; simmer until slightly thickened.
- Return the chicken to the skillet, top with shredded cheese, allow it to melt, then serve garnished with lime juice and cilantro.
