- 6 boneless, skinless chicken thighs
- 1 tablespoon white vinegar
- 1 lemon (juiced)
- 8 cups chicken broth
- 1 large onion (diced)
- 2 carrots (diced)
- 1 to 2 potatoes (diced small)
- 1 and ½ cups medium-grain rice
- Various seasonings: salt, pepper, paprika, garlic
Instructions
- Marinate the chicken in vinegar, lemon juice, and seasonings for at least one hour.
- Brown the marinated chicken in olive oil.
- Sauté diced onions and tomatoes before adding the chicken back into the pot.
- Pour in the broth and simmer for about an hour.
- Shred the chicken and return it to the pot along with rice and diced vegetables.
- Cook until rice and potatoes are tender.
- Let rest before serving.
