Ingredients
- 1 head of cauliflower
- 2 tablespoons butter
- 1 small onion, diced
- 2 tablespoons plain flour
- 1 cup milk
- 6 ounces cheddar cheese, shredded (divided)
- A pinch of black pepper
- A dash of ground nutmeg
Instructions
- Preheat your oven to 375°F (190°C).
- Blanch cauliflower pieces in boiling water for about 5 minutes until slightly tender. Drain and set aside.
- In a saucepan over medium heat, melt the butter, sauté the onion until softened, then stir in flour for about 1 minute.
- Gradually whisk in milk until smooth; cook until thickened. Remove from heat and mix in half of the cheddar cheese along with black pepper and nutmeg.
- In a baking dish, layer blanched cauliflower, pour cheese sauce over it, then sprinkle remaining cheddar on top.
- Bake for 25-30 minutes until bubbly and golden brown.
