  • 1 cup butter (softened)
  • 1 cup vegetable oil
  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 2 large eggs
  • 2 tsp almond extract

  • 4 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cream of tartar
  • 4 tbsp butter (melted)
  • 1/3 cup + 12 tbsp maraschino cherry juice
  • 45 cups powdered sugar
  • 1/2 cup slivered almonds

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, cream together butter, vegetable oil, granulated sugar, and powdered sugar until smooth.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in almond and cherry extracts.
  5. In another bowl, whisk flour, baking soda, and cream of tartar.
  6. Gradually add to the wet mixture until just combined.
  7. Gently fold in minced cherries.
  8. Line baking sheets with parchment paper.
  9. Drop rounded tablespoons of dough onto sheets about 2 inches apart.
  10. Bake for 10–12 minutes or until lightly golden around the edges.
  11. Cool on sheets before transferring to wire racks.
  12. For icing, mix melted butter with reserved cherry juice and gradually add powdered sugar until desired consistency is reached.
  13. Stir in almond and cherry extracts.
  14. Once cookies are cooled, ice them generously and sprinkle with slivered almonds.
