Ingredients
- 2 jars maraschino cherries (drained, minced)
- 1 cup butter (softened)
- 1 cup vegetable oil
- 1 cup granulated sugar
- 1 cup powdered sugar
- 2 large eggs
- 2 tsp almond extract
- 2 tsp cherry extract
- 4 ½ cups all-purpose flour
- 1 tsp baking soda
- 1 tsp cream of tartar
- 4 tbsp butter (melted)
- 1/3 cup + 1–2 tbsp maraschino cherry juice
- 4 – 5 cups powdered sugar
- 1/2 cup slivered almonds
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, cream together butter, vegetable oil, granulated sugar, and powdered sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in almond and cherry extracts.
- In another bowl, whisk flour, baking soda, and cream of tartar.
- Gradually add to the wet mixture until just combined.
- Gently fold in minced cherries.
- Line baking sheets with parchment paper.
- Drop rounded tablespoons of dough onto sheets about 2 inches apart.
- Bake for 10–12 minutes or until lightly golden around the edges.
- Cool on sheets before transferring to wire racks.
- For icing, mix melted butter with reserved cherry juice and gradually add powdered sugar until desired consistency is reached.
- Stir in almond and cherry extracts.
- Once cookies are cooled, ice them generously and sprinkle with slivered almonds.
