- 1 cup paradise fruit and peel mix
- ½ cup chopped pecans
- ½ cup chopped walnuts
Instructions
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, salt, and baking soda; set aside.
- In a stand mixer, cream the granulated sugar, brown sugar, and butter until fluffy.
- Add the egg and vanilla extracts; mix until combined.
- Gradually incorporate the dry ingredients; do not overmix. Fold in nuts and fruit mix gently.
- Scoop tablespoon-sized portions onto the baking sheet, spacing them about two inches apart.
- Bake for 10-12 minutes until set but soft in the center; they will firm up as they cool.
- Cool on the baking sheet for one minute before transferring to a wire rack.
