- 1 large egg yolk
- 1/2 teaspoon pure vanilla extract
- 1 1/2 cups all-purpose flour (215g)
- 1 teaspoon cinnamon powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup dark chocolate chips (125g)
- 1/3 cup chopped walnuts (50g)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the melted butter and light brown sugar using a whisk until smooth. Add the mashed banana, egg yolk, and vanilla extract; mix well.
- In another bowl, whisk together the all-purpose flour, cinnamon powder, baking soda, and salt. Gradually mix this into the wet ingredients until just combined.
- Fold in the dark chocolate chips and chopped walnuts gently.
- Using a tablespoon or cookie scoop, portion out dough onto a parchment-lined baking sheet, leaving space between cookies.
- Bake for about 10 minutes or until edges are golden brown. Allow cooling briefly before transferring to a wire rack.
