Ingredients
- 1/2 cup Unsalted Butter (softened)
- 1/2 cup Brown Sugar
- 1/2 cup Granulated Sugar
- 1 large Egg
- 1 teaspoon Vanilla Extract
- 1 1/4 cups Unbleached Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Kosher Salt
- 1/2 cup Quick Oats
- 1 cup Mini Chocolate Chips
- 1 1/4 cups Crushed Cadbury Mini Eggs (divided)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together softened butter, brown sugar, and granulated sugar until smooth. Mix in the egg and vanilla extract.
- In another bowl, combine flour, baking soda, salt, and oats. Gradually add this mixture to the wet ingredients until just combined.
- Fold in mini chocolate chips and half of the crushed Cadbury Mini Eggs.
- Drop rounded dough onto the prepared baking sheet about two inches apart.
- Bake for 9 minutes or until lightly golden around the edges.
- Sprinkle remaining crushed Cadbury Mini Eggs on top while still warm.
- Cool on the baking sheet before transferring to wire racks.
