- 1 cup instant pistachio pudding mix
- 2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup brown sugar, packed
- 2 large eggs
- 1 tsp baking soda
- 1 cup chopped pistachios
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
- Add eggs one at a time, mixing well after each addition.
- In another bowl, whisk together the pudding mix, flour, and baking soda. Gradually add this mixture to the wet ingredients until just combined.
- Gently fold in the chopped pistachios.
- Drop tablespoon-sized dollops of dough onto the prepared baking sheet about two inches apart.
- Bake for 10-12 minutes or until lightly golden around the edges but still soft in the center. Let cool before serving.
