- 2 boneless skinless chicken breasts
- 6 cloves garlic, minced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 ½ cups chicken broth
- 2 pounds Yukon Gold potatoes
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Season the chicken breasts with salt and pepper. In a skillet over medium-high heat, sear the chicken until golden brown and cooked through (165°F). Set aside to keep warm.
- In the same skillet, reduce heat to medium and melt butter. Sauté minced garlic until fragrant, about 1 minute. Stir in flour to create a roux, cooking for another 1–2 minutes.
- Gradually whisk in chicken broth and simmer until thickened, seasoning with salt and pepper.
- For the mashed potatoes, boil peeled Yukon Gold potatoes until tender. Drain, then mash with milk and shredded cheddar cheese until smooth. Season to taste.
- Serve mashed potatoes topped with sliced chicken and rich garlic gravy.
