- 1 3/4 lbs boneless skinless chicken breasts
- 1 lb grape tomatoes
- 1 (8 oz) package mozzarella balls
- 2 cups fresh basil leaves
- 3 Tbsp parmesan cheese
- 1/3 cup olive oil
- Balsamic glaze for drizzling
Instructions
- Soak wooden skewers in water for at least 1 hour.
- Preheat the grill to medium-high heat (425°F).
- Thread chicken pieces and grape tomatoes onto skewers.
- Brush with olive oil and season with salt and pepper.
- Grill skewers for about 4-6 minutes per side until chicken reaches an internal temperature of 165°F.
- Prepare pesto by blending basil, parmesan, pine nuts, garlic, and olive oil in a food processor until smooth.
- Remove skewers from the grill, add mozzarella balls, top with pesto, and drizzle with balsamic glaze before serving.
