Ingredients
- 1 lb boneless, skinless chicken breast
- 12 oz chow mein noodles
- 2 cups shredded cabbage
- 1 large julienned carrot
- 1/2 batch green onions
- 2 garlic cloves
- 4 Tbsp soy sauce
- 3 Tbsp low sodium soy sauce
- 3 Tbsp light sesame oil (not toasted)
- 1/2 cup chicken broth
- 1 Tbsp corn starch
- 1 Tbsp granulated sugar
Instructions
- In a mixing bowl, whisk together soy sauce, sugar, sesame oil, chicken broth, and cornstarch. Set aside.
- Cook chow mein noodles according to package instructions. Drain and rinse under cold water; set aside.
- Heat olive oil in a wok or large skillet over medium heat. Cut chicken into bite-sized pieces and sauté until golden brown. Remove from pan and set aside.
- In the same pan, add carrots, cabbage, and minced garlic. Sauté until veggies are softened.
- Return chicken and noodles to the pan. Pour in the prepared sauce and cook for 2 more minutes until heated through.
- Garnish with chopped green onions before serving.
