Ingredients
- 1 rotisserie chicken (shredded)
- 1 English cucumber (sliced)
- 4–5 Roma tomatoes (chopped)
- 1/4 red onion (thinly sliced)
- 2 avocados (diced)
- 1/2 cup flat leaf parsley (chopped)
- 3 tablespoons olive oil
- 2–3 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Debone the rotisserie chicken and shred it into bite-sized pieces.
- In a large mixing bowl, combine sliced cucumbers, chopped Roma tomatoes, thinly sliced red onion, diced avocados, and chopped parsley.
- Add shredded chicken to the vegetable mixture.
- Drizzle with olive oil and lemon juice; season with salt and pepper.
- Toss gently with two forks or salad tongs until well mixed, being careful not to mash the avocado.
