  • 2 large boneless skinless chicken breasts
  • ¼ cup flour
  • 2 tablespoons olive oil
  • 1 cup white apple vinegar
  • 3 tablespoons butter
  • 4 cloves minced garlic
  • 1 cup chicken broth
  • ¼ cup heavy cream
  • 1/3 cup freshly grated Parmesan cheese
  • Fresh lemon juice (from about 2 tablespoons)
  • Italian seasoning
  • Salt
  • Pepper

Instructions

  1. Slice chicken breasts in half lengthwise and pound to about ½ inch thick. Pat dry.
  2. Season both sides with Italian seasoning, salt, and pepper. Dredge in flour and tap off excess.
  3. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes on each side until golden brown. Remove from pan.
  4. In the same skillet, add white apple vinegar, scraping up browned bits from the bottom. Reduce by half.
  5. Add butter and minced garlic; cook for one minute. Stir in chicken broth and seasonings.
  6. For a thicker sauce, mix cornstarch with cold water and stir into bubbling sauce if desired.
  7. Lower heat; add heavy cream gradually while stirring until smooth. Mix in Parmesan cheese until melted.
  8. Return chicken to skillet, spoon sauce over it, and simmer partially covered for five minutes before serving.
