Ingredients
- 2 large boneless skinless chicken breasts
- ¼ cup flour
- 2 tablespoons olive oil
- 1 cup white apple vinegar
- 3 tablespoons butter
- 4 cloves minced garlic
- 1 cup chicken broth
- ¼ cup heavy cream
- 1/3 cup freshly grated Parmesan cheese
- Fresh lemon juice (from about 2 tablespoons)
- Italian seasoning
- Salt
- Pepper
Instructions
- Slice chicken breasts in half lengthwise and pound to about ½ inch thick. Pat dry.
- Season both sides with Italian seasoning, salt, and pepper. Dredge in flour and tap off excess.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes on each side until golden brown. Remove from pan.
- In the same skillet, add white apple vinegar, scraping up browned bits from the bottom. Reduce by half.
- Add butter and minced garlic; cook for one minute. Stir in chicken broth and seasonings.
- For a thicker sauce, mix cornstarch with cold water and stir into bubbling sauce if desired.
- Lower heat; add heavy cream gradually while stirring until smooth. Mix in Parmesan cheese until melted.
- Return chicken to skillet, spoon sauce over it, and simmer partially covered for five minutes before serving.
