- 8 chicken thighs
- 1 cup pitted green olives
- 1 cup pitted black olives
- 1/2 cup prunes
- 1/2 cup olive oil
- 1/4 cup apple vinegar
- 1/4 cup chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Marinate the Chicken: In a large mixing bowl, add chicken thighs. In another bowl, whisk together olive oil, apple vinegar, chicken broth, oregano, garlic powder, salt, and pepper. Pour over the chicken along with olives and prunes. Cover and refrigerate for at least 2 hours or overnight.
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Arrange in Baking Dish: Transfer marinated chicken and ingredients into a baking dish in a single layer.
- Bake: Bake for about 45 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and is golden brown.
- Serve: Let rest for a few minutes before serving. Garnish with fresh parsley if desired.
