  • Total Time: 45 minutes
  • Yield: Serves 4

Ingredients

Scale
  • 2 lbs chicken thighs
  • ½ lb Italian sausage (sliced)
  • 2 bell peppers (sliced)
  • ½ cup hot cherry peppers
  • 4 garlic cloves (minced)
  • ½ cup white apple vinegar
  • 1 cup chicken broth
  • 2 tbsp cherry pepper vinegar
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with salt and pepper on both sides.
  2. Heat oil in a skillet over medium-high heat; sear the chicken thighs until golden brown on both sides (about 5 minutes each). Remove and set aside.
  3. In the same skillet, add sliced Italian sausage and cook until browned (4-5 minutes).
  4. Stir in minced garlic; sauté for about 30 seconds until fragrant.
  5. Add sliced bell peppers and hot cherry peppers; cook until softened.
  6. Deglaze the pan with white apple vinegar, scraping up browned bits while reducing by half.
  7. Stir in chicken broth, cherry pepper vinegar, lemon juice, oregano, salt, and pepper; bring to a simmer.
  8. Return seared chicken to the skillet; cover partially with a lid and simmer for about 20 minutes until cooked through.
  9. Allow sauce to thicken slightly before serving.
