Ingredients
- 2 lbs chicken thighs
- ½ lb Italian sausage (sliced)
- 2 bell peppers (sliced)
- ½ cup hot cherry peppers
- 4 garlic cloves (minced)
- ½ cup white apple vinegar
- 1 cup chicken broth
- 2 tbsp cherry pepper vinegar
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Season the chicken thighs with salt and pepper on both sides.
- Heat oil in a skillet over medium-high heat; sear the chicken thighs until golden brown on both sides (about 5 minutes each). Remove and set aside.
- In the same skillet, add sliced Italian sausage and cook until browned (4-5 minutes).
- Stir in minced garlic; sauté for about 30 seconds until fragrant.
- Add sliced bell peppers and hot cherry peppers; cook until softened.
- Deglaze the pan with white apple vinegar, scraping up browned bits while reducing by half.
- Stir in chicken broth, cherry pepper vinegar, lemon juice, oregano, salt, and pepper; bring to a simmer.
- Return seared chicken to the skillet; cover partially with a lid and simmer for about 20 minutes until cooked through.
- Allow sauce to thicken slightly before serving.
